I would love to do anything possible to help you in the production of your CD, it sounds very interesting!
The best time to record the sounds of wine being opened would be before the start of business. This would allow you the best time to record the actual “pop” of the cork itself as it can get pretty noisy in our tasting room when it is filled with our guests. We open the tasting room at 10am, would 9am in the morning work for you Tuesday 4/25? Please let me know if that works for you.
